Taco Soup

I know. This isn't a recipe site - and it won't become one. But I was thinking today about some of the tasks that become burdensome to moms and keep us from resting....especially those accustomed to family, Sunday dinners. So I think that we will be sharing some occasional recipes that are SUPER easy (seriously) and fit for company. I'm thinking Kendra might take the bait and if any others want to e-mail your ideas in, we'll be happy to share them.


So here is my first one. This is truly yummy, protein rich, and EASY! Basically you need a can opener, a pot and then be ready to dump it in.


Taco Soup


1 lb ground turkey


Taco Seasoning (a packet, or 1/4 cup from bulk, or your own combo)


1 can diced tomatoes


3 can beans (the same or a mix: black, pinto, kidney)


1 can olives (chopped, sliced, or whole)


1 can whole kernel corn (or equivalent of frozen)


Brown the turkey in a soup pot and add the seasoning. Mix well. Dump all the canned ingredients in the pot without draining. Simmer for 15 min. on medium high. Serve with tortilla chips, cheese, and sour cream if desired.
